Happy Harvest 😁

Harvest has begun, and it is rolling along quickly! Between all the rain we’ve seen this year and plenty of hot sunny days, nearly all of our white grapes were ready to be picked within a single week.

As we work through the next few weeks, it will be our red grapes’ 🍇 turn to come off the vine. Harvest is always a fun time to visit the winery - you never know when you might see a tractor driving around with a bin full of grapes, or you may even get to watch the lucky person cleaning all the dirty harvest buckets out on the crush pad!

Bubbling Yeast

Our yeast is working hard in winery, and that is certainly an understatement! For those who are not familiar, yeast is single-celled fungus essential to all alcohol, baked goods, fake meat, and more. Yeast eat the sugar in grape juice, turning it into alcohol while producing CO2 (which creates the bubbling you see here).

Every year, we select a variety of engineered yeast strains developed specifically for certain grapes and wine styles - this is not your everyday bread yeast!

Generally the yeast take about 2 weeks to eat up all the sugars in the grape juice. At this point, you have wine 🍷. However, most people don’t like little speckles floating in their wine, so we take several steps to filter and clarify the wine into something more palatable before barrel aging.

SSV ‘19 Viognier

New vintage alert 🔥. We recently switched to our 2019 Viognier at Shadow Springs. This wine is a crisp, fruity white perfect for these last summer nights before the Fall. In fact, Jamey brought a bottle to our family’s Labor Day cookout that paired perfectly with juicy burgers and hot dogs.

2019 was great vintage overall for NC wines, so we’re excited to release this as well as other ‘19 wines in coming months.
